Designed and manufactured in Brisbane, Australia, the Beech Ovens Diamond Grill is a char grill with a difference, and is without doubt one of the spectacular highlights of the 2010 char grill range.

The oval shaped grill starts life as a base model consisting of four cooking plates in a variety of griddle and smooth plate combinations. Clients can then personalise the design using Beech Ovens’ extensive range of optional features including radiant cooktops, charcoal pits, shawarma (kebab) units, rotisserie units, deep fryers, mounted bain maries, tandoor ovens, sinks, shelves and condiment tray races.

The Diamond Grill is finished with a finely polished stainless steel that is suited to both theatre kitchen and back of house.

MEDIA RELEASE

27/4/2010

FOR IMMEDIATE RELEASE

Beech Ovens Introduces New Window Design

Beech Ovens has released a new window design which features a triple glazed heat reflective glass with air vent extraction between layers.

The glass is manufactured by fellow Australian company, G James Glass, and the almost zero coefficient thermal expansion rate makes it ideal for high temperature use.

With flexibility in exhaust system connection - to the spray filter or vented directly into an overhead canopy, the revolutionary combination of glass and Beech Ovens design has produced a window with spectacular viewing capacity and a touchable surface of up to 50 degrees.

The Beech Ovens window, which is a popular accessory that creates ambience and atmosphere within dramatic theatre kitchen, is now safer than ever and ideal for even the most intimate restaurant.

For more information, visit the Beech Ovens website www.beechovens.com.au.

Many of these char grills have been custom built to a designer's specification, providing a very unique and high performance piece of display cooking equipment.

We have recently built a number of custom designed char grills with skewers above for multi-featured cooking.

The units feature the high performance Beech char grill as circular or rectangular units. Built over these units can be a number of motorised skewers for slow roasting of whole fish or other items above the grill. This is a highly visual feature allowing guests to watch a variety of foods being freshly prepared.

Amongst these developments in char grills is the Lechon grill. This grill was custom built for a Shangri-La Hotel and features a charcoal grill with rotisserie units above for both fish and small items (the rear angled units) and a larger rotisserie above the grill for small pigs and similar sized items.

Another unique variation has recently been supplied to a restaurant in Moscow. This display cooking unit features a char grill with 4 angled skewers at the rear, and a side griddle plate.

This style of grill and combined rotisserie unit allows the traditional outdoor BBQ and spit roast to be brought into the modern display kitchen to create both a visual and gastronomic feast.

Original post blogged on b2evolution.

Currently many of our orders call for customised features such as added viewing windows, internal spotlights, char grills, unusual shapes and sizes and even removable rotisserie units.

Recently 2, 3 or 4-door ovens seem to have come into their own and no two are the same.

Many multi-door ovens feature char grills inside the ovens, but some (such as the oven installed in the A?Rosa Hotel in Berlin, below right) feature only the stone hearth for cooking pizza or other menu items in pans or clay pots.

Some installations have placed separate ovens side by side behind a single façade. When doing this Beech Ovens can customise the door spacing so that the final effect includes evenly spaced doors. The advantage of having separate chambers within the oven is that they can be controlled at different temperatures, allowing a greater variety of menu items to be cooked at the one time.
An example of this is the 4-door oven in the Grand Hyatt Tokyo. This oven features 2 x 2-door ovens installed to appear as one large oven. One oven is maintained very hot for cooking steaks on the grill and pizza or pan dishes on the stone floor. The second oven is a little cooler and is used to cook fish on the grill and breads on the stone floor. (Read a review of this restaurant)

Many of our clients do not cook pizza at all, but use the ovens for a very diverse menu. If you are looking for ideas for menu items, please have a look at the Creative Cooking page on our website or view the Gourmet Cooking video on our free marketing CD.

Menu is only one factor determining the custom features of an oven. Restaurant design also plays a major part, and Beech ovens are often customised to suit an individual restaurant layout. The rectangular oven featured in the Foreign Correspondents Club in Siem Reap, Cambodia has a window facing the dining area, with a mouth for pizza at one end and a char grill on the opposite end. This layout allows 2 chefs to operate the 2 areas of the oven completely independently and with maximum efficiency within their section of the open kitchen.
(Read a review of this restaurant)

Customised features can be purely for visual effect. These features include the viewing window, internal spotlights, custom shaped doors, display gas flames and ceramic logs. In some instances our custom ovens are being designed to be used as display fireplaces when they are not being used for cooking.

To find out more about our custom oven features please visit the custom oven page of our website. You can also contact Beech Ovens directly for design support to assist you to find the custom oven which best suits your restaurant.

Original post blogged on b2evolution.

This rotisserie can be large enough to cook whole lambs, pigs or other large pieces of meat, or smaller for poultry. The intense heat inside the oven means that the meat cooks evenly and is extremely tender and tasty.

By having the rotisserie inside the oven moisture is retained and there is no drying out as the meat bastes in its own juices. When a wood fire is also used a subtle flavour is imparted to the meat, adding to the appeal. Glass doors and a display flame mean that the full visual impact of the fire and the rotisserie is maintained throughout, making the rotisserie oven a high performance cooking item which can take centre stage in any display kitchen.

An 18kg lamb is easily cooked in less than 2 hours, and the result is mouth-wateringly succulent! This oven will certainly have customers returning to your restaurant!

The rotisserie has a motor drive at the rear, which is set to rotate at the correct speed for perfect cooking of any piece of meat. The unit is robust enough to prevent any imbalance to the rotation, which is often caused by not having the weight of the meat evenly distributed along the spear.

When not in use the rotisserie can be removed from the oven and pizza or other dishes can be cooked here. The unique frame and drip tray means that removing fat from the oven is safe and easy, and the oven itself remains clean.

A small rotisserie can easily be added to a standard multi-door rectangular oven, or for larger rotisseries, ovens are custom built to suit with an option for a separate fire box with glass window.

As with all our ovens the finish can be custom built to suit your restaurant.

We have just installed the oven pictured in the new Park Hyatt Dubai Creek. This large oven features a central firebox, with a rotisserie oven for whole lambs on the left and on the right, stone hearth for pizza and char grill for steaks. We have recently sold 2 tandoors to the recently refurbished Oberoi Hotel in New Delhi.

The Oberoi has been replacing the locally made tandoori pots in their restaurants every 6-7 months. Obviously this gets very expensive - replacement pots may be readily and cheaply available, but restaurant downtime is costly.

It was the quality of the Beech tandoor which appealed to the Oberoi group- and knowing that they would never again have to replace the internal pot of their tandoors.

We would like to thank the Oberoi chain, who have purchased numerous pizza ovens from us over the years, for the confidence they have placed in our products.

Selling tandoors to India (the home of the tandoori oven) is truly the greatest recognition of the superior quality and performance of the Beech tandoor.

Also instrumental in this success were design legends, Derek Horn and Roland Gaelens. Derek and Roland have taken full advantage of the ability of Beech to custom make ovens to their exact specifications for many years, and in doing so have been amongst our greatest motivators - trying to meet the challenge of their next design! Together they have been responsible for some very impressive tandoor installations, including tandoors clad in Mother of Pearl (Le teousrok Mauritius - Derek Horn), and tandoors featured behind orange glass (Berlin Radisson - Roland Gaelens).

Whilst selling tandoors to India is an achievement we are very proud of, we are no less proud to have London's leading India food restaurants amongst our tandoor customers also. Thanks to the very impressive creative efforts of Creative Kitchen Planners in Malaysia, a three-station tandoor unit, clad in hammered stainless steel has been installed in Chutney Mary's in central London. CKP are also responsible for another 2 tandoors currently in production for a luxury installation in Jakarta, this time the external barrel shape of the tandoor will be clad in hammered copper.

Meanwhile the Hyatt hotel chain has taken advantage of our custom design options.
