BREAKING NEWS - FINE FOODS 2010

  Renaissence Hotel Bangkok - INDUSTRY FEATURE

The hotel industry is on the incline, with a number of new openings in the first half of 2010.

Beech Ovens Corporate Chef James Garton was invited to the Marriott’s newest hotel in Bangkok, The Renaissance, to assist with product training before the big opening.

The Renaissance is a luxurious 275 room, 22 floored building located in the Ratchaprasong district and has five (5) Beech Ovens in a variety of restaurants.

Chef James was on site for 2 days training on the Beech Ovens products from pre-firing instruction training for the site contractor to a tailor-made cooking segment for the Chefs.

The cooking segment was a creation of menu items that will be produced from the Beech Ovens on site, including the great Australian favorite the “Jaffle”, which is a toasted sandwich with a difference and features custom made jaffle irons commissioned by Executive Chef Michael Hogan for the R-Bar all day menu. 

The training event was a success and has created an influx of interest from other hotels and chains.

Chef Jess Barnes - BEECH CHEF FEATURE
Image Chef Jess Barnes began his career as an apprentice butcher before joining Grossi Florentino, where he has excelled as Sous Chef for the past eight years.

As a true professional who cooks with theatrical flair, Chef Jess is also well experienced as second in command with duties ranging from food preparation and menu design, to business management, front of house direction, staff training, health & safety matters plus costing and purchasing.
 
With this experience and enthusiam for the industry, Chef Jess Barnes is headed to Bangkok on a new mission.

The mission is Grossi, Trattoria & Wine Bar, the first internationally branded Italian restaurant in Bangkok. 

Guy Grossi is recognised in Australia as top restaurateur, author and celebrity chef - having cooked for many prominent figures including royalty, heads of state and film and music stars - and has partnered with InterContinental Bangkok to bring his own innovative restaurant concept to town. 

The combination of Guy Grossi, InterContinental and Chef Jess means one-of-a-kind cuisine for those in the know about true trattoria-style Italian dining.  This will be  complemented by an extensive wine list of bountiful vintages from the world renowned wine making regions in Italy.

Guests of the restaurant – a rousing addition to the city’s dining scene – will savour the performances of an Italian-cuisine star who learned from a master as Chef Jess creates an exciting mix between tradition and new ground.

Beech Ovens Test Kitchen - COOKING FEATURE
Image Beech Ovens will open their newly refurbished test kitchen to the public in August 2010.

The test kitchen is purpose-built with the goal to make it a multi-functional space for the entire Beech Ovens team.

When opened, the test kitchen will be used for:

*  Cooking training for Chef clients.

*  Research and development for the engineering department.

*  Product training for installation clients.

It is a thrilling expansion for the Brisbane based family company which is continually producing spectacular cooking equipment for the hotel and restaurant industry.
