Rectangular Oven
Beech Ovens are proud to offer a range of rectangular ovens available in standard sizes suitable for clients who have either a little or large space.
SMALL RECTANGULAR OVEN: The Small Rectangular Oven is available in two sizes (REC0700 & REC0850). They are typically gas fired only and if ordered with the stainless steel cladding, they are complete and ready to operate.
RECTANGULAR OVEN/CHAR GRILL OVEN: The Beech Rectangular Oven (model REC1250) also available with a char grill (model RGO1250) is our most popular oven. Incorporating a char grill with standard stone hearth cooking combines the best of both worlds and is an essential inclusion to any display kitchen. The versatility and range of cooking in this style of oven is only limited to the imagination and skill of the user.
A creative chef can multi-skill these appliances to prepare a range of foods other than pizza. Many of our customers use these ovens for a vast array of cooking duties; steaks, chicken breasts, fish & prawns can be cooked on the grill or in skillets, whilst all other baking is carried out on the other side opening using skillets for cooking small dishes and croc pots for soups. That the oven is able to do such a broad spectrum of cooking duties has been achieved by having items requiring a cooler temperature nearer the mouth of the oven (where it is cooler) and vice versa. Cooking with a wood fire, although incredibly hot, is also very "forgiving". Breads could be cooked at off-peak times and reheated, or par-baked elsewhere and finished off in the oven. If the oven is to be used for a variety of cooking at the one time, requiring the various doors of the oven to be operated at different cooking temperatures, Beech can custom build internal compartments to allow different sections of the oven to be maintained at different temperatures. We offer 4 models in this range:
REC0700 – Internal floor area measuring 700mm x 700mm (External including Insulation & Air Gap: 950mm x 1050mm)
REC0850 – Internal floor area measuring 850mm x 850mm (External including Insulation & Air Gap: 1100mm x 1200mm)
REC1250 – Internal floor area measuring 1250mm x 850mm (External including Insulation & Air Gap: 1600mm x 1235mm)
RGO1250 – Internal floor area measuring 1250mm x 850mm (External including Insulation & Air Gap: 1600mm x 1235mm)
However this oven can be built to almost any size requested with two, three or more doors, one of which may include a slide-in char grill assembly. Please see Custom Ovens to find out more about the range of options available.
The REC0850 and RGO1250 ovens can cook up to 4 x 10" pizzas at the one time producing over 35 pizzas per hour, cooking a typical pizza in 4-6 minutes. The RGO1250 char grill has a cooking surface of approx 525mm x 700mm.

The food is cooked in a single chamber and on the same surface as the fire (the stone hearth). Aside from pizza the oven can also be used to cook a wide variety of food including foccacias, flat breads, roasts, pies and basically anything that can be cooked in a traditional oven. The oven reheats to operational temperature in approximately 1-2 hours depending on usage conditions.
Please note that we always recommend that the supplied plug door be positioned correctly in the oven mouth when pre-heating the oven.
The REC700 and REC850 models ovens are typically fully gas fired. Due to the limited internal floor area a gas only oven allows the available floor area to be utilized for cooking.
All gas systems used in Beech Ovens are thermostatically controlled and include a digital temperature read out. The full gas system for this oven includes the spectacular display burner as standard. Please note that the display burner is not compatible with wood burning ovens however you could use smoking chips to achieve additional flavour if desired. The RGO1250 oven can be wood fired, combination wood and gas or fully gas fired. With the gas fired oven, a small amount of wood can be burnt for flavour and ambience, or an artificial gas log fire can be supplied on request.
The char grills are typically full gas for easy of use however we can supply a wood/charcoal only grill unit if desired. A wood fired grill actually utilises a separate bed of embers, which are placed under the grill so this heat can be controlled by the cook varying the quantity of embers under it. The baking area uses a fire placed at the middle back, or can also be gas fired.

The performance of any stone hearth oven can be measured by the mass/weight of the dome roof and its height above the floor. The weight of the ceramic in the oven roof is referred to as the thermal mass. The closer this thermal mass is to the floor, the more efficiently heat is transferred to the cooking surface and food.
Beech ovens have the lowest ceiling height and at least twice the thermal mass of its nearest competitor and almost 3 times the thermal mass of most light weight modular ovens!
Beech can organise to ship or airfreight ovens anywhere in the world. On request we can organise a contractor to install the oven for you or alternatively or we can supply a full installation and operation video so that you can install the oven yourself.

This oven is available with a stainless steel façade so they can be installed without a further architectural finish if required. A cost saving can be made if the stainless steel cladding is not required and the client is able to source a less expensive external finish. The client is welcome to purchase the oven without the cladding and then finish the oven in a style that suits their interior design. Please refer to our Façade Guide document for construction details.
The client has the option of building their own façade, selecting from our standard designs or use our custom design service to design whatever suits. The colours and finishes are unlimited and can be designed to meet your exact requirements, please visit our rectangular oven photo gallery to see examples. If the client wishes to purchase the oven without the cladding and then finish the oven in a style that suits their interior design. It is the purchaser's responsibility to install the ductwork for the oven. We are able to provide standard duct dimensions however all design and construction must be carried out in accordance with local authority regulations. The exhaust is best in a dedicated system. The airflow should be no less than 700 litres per second or 1000 litres per second for multi-door ovens. It is critical that the oven ductwork be installed in accordance with local regulations. Balancing air pressure systems around the oven is absolutely critical for successful functioning of stone hearth ovens. Heating problems and gas flame blowdown due to unbalanced kitchens, strong winds or unbalanced return air for exhausts or air conditioning systems are critical installation issues which in no way reflect upon the quality or ability of the oven itself. Beech Ovens take no responsibility for poor performance due to external factors impacting on the oven, however we are very willing to assist with information or advice which will enable you to correct such difficulties.
